Jade C.F. Berger Absinthe Superieure 750ml

Jade C.F. Berger is an absinthe made in France by Ted Breaux at the Combier distillery, reconstructed from chemical analysis of sealed pre-ban bottles rather than from a modern recipe — putting the nineteenth-century Swiss and French styles back in the glass is the whole point of the Jade project. It is distilled with grande wormwood, green anise and fennel, and takes its colour from herbs rather than dye. The nose is anise, fennel and dried herb, the palate is layered with wormwood bitterness, mint and a soft floral centre, and the finish is long and cooling. Serve it traditionally, with iced water dripped slowly over the pour.
