La Higuera Sotol Dasylirion Cedrosanum Durango 750ml

La Higuera Sotol Dasylirion cedrosanum is distilled from wild sotol harvested in Durango. Sotol is not agave at all but a desert plant that takes well over a decade to mature before it is cut, and the spirit reads greener and more mineral than mezcal as a result. Cedrosanum is the workhorse species of the category and the clearest introduction to it. The nose is damp earth, green herbs and a faint thread of smoke; the palate runs to grassy vegetal sweetness, white pepper, pine and wet stone; and the finish is dry, clean and long. Drink it neat at room temperature in small pours, with nothing added.
