The island's young farm distillery built its reputation on bold cask experiments, and this bottling is one of the more daring: spirit distilled in 2013, matured for years, then given a final stretch in casks that once held mezcal. Two smoke traditions meet in the glass — peat and earthy agave on the nose, then pepper-dusted dark chocolate and smoky vanilla across the palate, with dried fruit carrying the long finish.
