La Higuera Wherleri Palmilla 750 ML

La Higuera Wheeleri Palmilla is another single-species bottling in the range — palmilla is the local name for Dasylirion wheeleri, the sotol that grows in high desert country. Wild plants are cut by hand, cooked, fermented and distilled without blending, so what ends up in the bottle tastes of one plant from one place rather than a house average. The nose is soft and green: herbs, cucumber skin and a little pine. The palate is lightly sweet and vegetal with white pepper, lime peel and wet stone underneath, and the finish is dry and clean. Sip it neat at room temperature in a small glass — no ice, no mixer.
