Lagrimas del Valle Plata La Sabina is an unaged tequila from Jalisco, released under a project that names each bottling for the ranch the agave came from rather than blending everything into one house style. That single-estate approach is the reason two plata releases from the same producer can taste noticeably different, and it rewards drinking them side by side. La Sabina shows cooked agave, green apple and wet stone on the nose, a clean peppery palate with citrus, herbs and a saline edge, and a crisp, dry, mineral finish. Serve it neat in a small glass, or build a margarita that lets the agave stay in front.
