Octo Blue Blanco is an unaged tequila bottled at 80 proof, the expression that shows the agave with nothing standing in the way. Blanco goes into glass within weeks of distillation, so there is no barrel to soften or sweeten whatever comes off the still, and every decision made in the field and the oven is still audible. The nose is cooked agave, lime zest and a green vegetal snap; the palate is crisp and peppery, with citrus, wet stone and a little herbal bite; the finish is short, dry and clean. This is the bottle for margaritas and palomas, though it holds up neat in a chilled copita.
