Pearse The Original is a five-year-old Irish whiskey from Pearse Lyons Distillery in Dublin, where the stills sit under the roof of a restored medieval church in the Liberties. Five years in oak is the entry point of the range, and it plays to the easy, approachable side of Irish whiskey rather than trying to out-muscle it. Expect green apple and vanilla on the nose, a soft palate of honey, malt and light citrus, and a short, clean finish with a whisper of oak spice. Pour it neat, build it into a highball with ginger ale, or use it as the base of a properly made Irish coffee.
