Penelope starts from a high-rye mash of 95% rye and 5% malted barley, distilled in Lawrenceburg, Indiana, then finishes each batch in barrels that once held sweet Tokaji wine, a pairing that pulls the rye toward dried fruit and honey. Ripe grape and brown sugar open the nose; caramel, raisin, and dark chocolate ride over the rye's baking spice on the palate; the finish dries into oak and cracked pepper. Bottled at 104 proof.
