Prairie Fairie is the absinthe from Quincy Street Distillery in Riverside, Illinois, a small operation working out of a former plumbing shop on the street it takes its name from. Absinthe is built on the classic trio of grande wormwood, anise and fennel, and this one keeps that framework: anise, fennel and cut grass on the nose with a bitter wormwood edge underneath, then sweet liquorice and green herbs on the palate that dry into something faintly medicinal, and a long cooling finish. Serve it the traditional way, dripping iced water over a sugar cube until it louches, or use it to rinse a Sazerac glass.
