Tequila Mascota Blanco is unaged blue agave tequila, bottled straight rather than rested in wood. Blanco is where a producer's choices show through most clearly — how the piñas were cooked, how long the juice fermented, how the spirit was cut — because there is no barrel sweetness covering any of it. Fresh agave, citrus zest and a green vegetal note lead the nose; the palate is sweet cooked agave with black pepper and lime running through it; the finish is crisp, peppery and quick to clear. Drink it neat and lightly chilled, or put it to work in a margarita or paloma with fresh juice.
