Balvenie remains one of the few Scottish distilleries still running its own floor maltings, cooperage and coppersmith, and 27 years of patience is the kind of thing that programme exists to make possible. Honey, dried tropical fruit and warm spice on the nose; candied orange, toffee and soft oak across a rich palate; a long, honeyed finish drying out on oak. Pour it neat, in a tulip glass, unhurried.
