The Producer Mezcal San Martin 750ml

The Producer Mezcal San Martin is a small-batch Oaxacan mezcal named for the village it comes out of, in the style that has defined the spirit for centuries: agave hearts roasted underground over wood, then fermented and distilled in small volumes. The smoke people associate with mezcal is a by-product of that pit roast, not an additive, which is why it reads as cooking rather than flavouring. The nose is roasted agave, wood smoke and citrus peel; the palate brings cooked agave, green herbs, black pepper and a mineral edge; the finish is dry and medium-long. Drink it neat at room temperature, sipped slowly, never shot.
