Courage and Conviction is Virginia Distillery Company's American single malt, made from 100 percent malted barley on copper pot stills in the Blue Ridge foothills. This bottling comes from a single bourbon cask, number 1157, and goes out at cask strength, undiluted, so the barrel speaks at full volume. Ex-bourbon wood is the classic malt cask, pushing vanilla and honey rather than dark fruit. Expect a nose of malt, vanilla and toasted oak, a thick palate of honey, baked apple, cereal sweetness and warm spice, and a long, drying finish. Add water a few drops at a time and let it open up before deciding.
