Widow Jane Baby Jane is a bourbon built on heirloom corn — the Brooklyn distillery runs its own seed programme, growing old corn varieties that yield less than modern commodity corn but carry far more flavour into the mash. Widow Jane also proofs its whiskey down with mineral water drawn from the limestone mines at Rosendale, New York, which is part of the house texture. The nose is corn sweetness, vanilla and dried cherry; the palate turns to cornbread, caramel, cocoa and a little baking spice; the finish is soft, sweet and lightly oaked. Drink it neat, or over one large cube in a rich old fashioned.
