Wolves is a Los Angeles whiskey house that came out of craft brewing as much as out of distilling, and this is their five-year American single malt: malted barley, a single distillery's spirit, matured in oak on this side of the Atlantic. American single malt is the newest category on the shelf and it tends to run richer and sweeter than Scotch, which is what happens here. Malt loaf and dried apricot on the nose, a palate of honey, toasted cereal and light cocoa, then a finish of soft oak and baking spice. Drink it neat, or over one big cube.
