Griffo Stout Barreled Whiskey is American whiskey from the family distillery in Petaluma, California, put into barrels that previously held stout beer. Beer-barrel finishing is a Northern California habit born of simple proximity — there are more good breweries within driving distance than there are empty casks — and stout leaves behind exactly what you would hope: roast, chocolate and a little coffee bitterness layered over the whiskey underneath. The nose is malt, cocoa and vanilla; the palate runs toasted grain, dark chocolate and soft caramel with a roasty edge; the finish is dry and lightly bitter. Pour it neat, or use it in a boulevardier where the roast plays against the vermouth.
