Carlos Camarena makes El Tesoro Extra Anejo Tequila at La Altena, his family's highland distillery, the slow way - brick-oven-roasted Blue Weber agave crushed under a stone tahona wheel. The extra anejo then spends four to five years in American oak ex-bourbon barrels, a bottling Camarena dedicates to his father Felipe's love of aged tequila. It pours vibrant gold: coffee, cinnamon, and buttered caramel on the nose, then dark chocolate, dried fruit, and roasted almonds on the palate, closing with pepper and oak. El Tesoro is additive-free, so the agave still speaks through all that barrel time. Sip it neat after dinner in the spot you would normally hand to a cognac.
