Undiluted whiskey holds onto its oils and its weight, so this arrives thick and concentrated rather than easy. Caramel, vanilla and charred oak lead the nose, the palate turns to brown sugar, dark cherry and cinnamon with real heat behind it, and the finish runs long and oak-driven. North Carolina summers push whiskey in and out of the wood faster than Kentucky does, and it shows in the colour. Add water drop by drop until it opens.
