Caballito Cerrero Chato Reposado 750 ml

Caballito Cerrero is one of the old names of the Amatitán valley, a family operation that has been making agave spirit the traditional way far longer than most labels on the shelf. Chato refers to their blue agave grown on the valley floor rather than up in the highlands, and the house style tastes of agave and fire rather than added vanilla. Resting in oak softens the edges without burying them: cooked agave, green pepper and citrus on the nose, then caramel, black pepper and damp earth across the palate, and a dry, mineral finish. Sip it neat at room temperature, slowly, and give it air.
