La Leyenda Fine Sipping Mezcal Blanco is an unaged mezcal, bottled clear so the agave and the roast come through with no barrel in the way. Blanco is where mezcal is most honest: every step of the process is on show, from the cooking of the piñas to the character of the still. The nose leads with roasted agave and wood smoke, green herbs and citrus behind it; the palate is sweet and earthy with cooked agave, black pepper and lime peel over a clean mineral core; and the smoke fades rather than clinging. Serve it neat in a copita with an orange slice, or use it to smoke up a margarita.
