Salvadores Mezcal Artesanal Espadin Joven 750 ml

Salvadores Espadin Joven is an artisanal mezcal made from espadin, the agave that matures in seven or eight years and forms the backbone of the whole category. Artesanal is a legal production term, not a marketing one: the agave is roasted in an earthen pit, crushed, fermented in open wood and distilled in small stills, which is why the smoke here is a by-product of the roast rather than a flavouring. The nose is wood smoke, cooked agave and citrus peel. The palate is clean and mineral, with roasted sweetness, green pepper and a thread of ash. The finish is dry, smoky and medium-long. Drink it neat at room temperature, sipped rather than shot.
