Fidencio Mezcal unico 750ml

Fidencio Unico is an Oaxacan mezcal from the Fidencio range, made in Santiago Matatlan in the traditional way: agave roasted in an earthen pit, crushed, fermented in open wooden tanks with wild yeast and distilled twice in copper. That process is what separates mezcal from most spirits — the fire and the open air are part of the recipe, not just the equipment, and the smoke is a consequence of the roast rather than an ingredient. Expect roasted agave, smoke and green herbs on the nose, a palate of citrus, cooked fruit and minerality, and a long, dry finish. Serve it neat in a copita with orange on the side.
