El Joigorio Barril is a barrel-aged mezcal from Oaxaca, Mexico, built on the traditional espadín agave that carries most artisanal mezcal production. The agave is roasted in earthen pits, crushed by tahona, fermented in open-air vats, and distilled in small copper or clay stills before resting in wood, which is where "barril" comes in and softens the raw smoke into something rounder. Expect the earthy, smoky backbone mezcal drinkers chase, layered here with barrel-driven vanilla and spice.
