Once Espiritus Joven Espadin is a mezcal made from espadin, the workhorse agave of Oaxaca and the variety most people meet first. Traditional production means the pinas are roasted in an earthen pit lined with hot stones, which is where mezcal picks up the smoke that tequila does not have, then crushed, fermented and distilled with no barrel time at all. Expect woodsmoke, green herbs and citrus peel on the nose, a palate of roasted agave, black pepper and a mineral, almost briny edge, and a long, dry, smoky finish. Sip it neat at room temperature alongside orange and sal de gusano, or build a mezcal negroni.
