Midnight Marauder
Joaquín Simó, New York
The Midnight Marauder is mezcal, Bonal Gentiane-Quina and Cynar in equal parts, stirred with mole bitters and served up. Smoke, bitter gentian and earthy artichoke make it dark, savory and complex. A brooding drink for the nights before Halloween.

Joaquín Simó created the Midnight Marauder, pairing mezcal with two bittersweet European aperitifs in equal parts. Bonal was created in 1865 in the French Alps, and Cynar launched in Italy in 1952. Simó, who also created the Naked and Famous, later ran Pouring Ribbons in New York.

Bottle math, generally
Batching dilution
When you batch, there's no ice melting in a shaker, so you add the water yourself: 18% for spirit-forward drinks, 25% for shaken ones.
