Negroni au Provence
Dante, New York
The Negroni au Provence is gin, Suze and lavender-infused rosa aperitif wine, stirred with lavender bitters and served over fresh ice. Suze brings bitter gentian, the rosa brings fruit, and lavender gives the drink a floral lift. A taste of the south of France for October.

The Negroni au Provence is a Dante recipe that rebuilds the Negroni from French ingredients. Citadelle, a French gin, carries the base. Suze, a gentian aperitif created in 1889, replaces the Italian red bitter, and lavender-infused Cocchi Rosa takes the place of sweet vermouth. Lavender bitters tie it to the purple fields of Provence that inspired the name.

Batching dilution
When you batch, there's no ice melting in a shaker, so you add the water yourself: 18% for spirit-forward drinks, 25% for shaken ones.
