Negroni Bianco
Dante, New York (Naren Young); this is Dante's original spec
The Negroni Bianco is Brooklyn Gin, Kina L'Aéro d'Or, Alessio Vermouth Bianco and Carpano Dry, stirred with lemon bitters and a dash of verjus and served up with a sprig of baby's breath. It is soft, floral and gently bitter, with bright acidity. A gentle Negroni for early fall.

The Negroni Bianco is Dante's recipe. Dante, the Greenwich Village bar first opened as Caffe Dante in 1915, built a Negroni program under Naren Young that helped earn it the top spot on the World's 50 Best Bars list in 2019. This is their original spec: no red bitter, just a quinquina, two vermouths, lemon bitters and verjus. Dante pre-batches it with water; at home, stir it with ice instead.

Bottle math, generally
Batching dilution
When you batch, there's no ice melting in a shaker, so you add the water yourself: 18% for spirit-forward drinks, 25% for shaken ones.
