Aberfeldy Highland Single Malt with a Bolgheri finish takes the distillery's honeyed Perthshire spirit and gives it time in casks from Bolgheri, the Tuscan coastal appellation known for its Cabernet and Merlot blends. Aberfeldy is the malt at the heart of Dewar's, and its house character is unusually sweet for a Highland, all heather honey and orchard fruit. The red wine casks push it darker: a nose of honey, dried cherry and orange peel, a palate carrying red berries, vanilla, cocoa and a soft tannic grip, and a finish of honeyed fruit fading into gentle oak. Pour it neat and let it sit a few minutes before you add any water.
