Aleron Mezcal Joven 750ml

Aleron Mezcal Joven is an unaged mezcal, bottled straight after distillation with no time in wood. Joven is where mezcal is most itself: the agave is cooked in an earthen pit, which is where the smoke comes from, then crushed, fermented and distilled, and nothing afterward softens the result. Expect woodsmoke and roasted agave on the nose, with green herb and citrus underneath. The palate is oily and savoury, running cooked vegetable, lime pith, a little wet stone and black pepper, and the finish is dry with smoke lingering longest. Sip it slowly at room temperature from a copita or a clay cup, or use it to give a margarita a smoky spine.
