The agave is oven-roasted, fermented in cement tanks with house yeast, and double-distilled before the spirit rests the better part of a year in ex-bourbon American oak. That barrel time gives the Artesanal Suave line its softer, rounder shape: cooked agave and light vanilla up front, then ripe apple, plum, and a run of mint and pepper across the middle, closing clean rather than heavily oaked.
