Aviation Gin Deadpool Edition is the standard Aviation American Gin in a comic-book label, distilled in Portland, Oregon and bottled at 42%. Aviation was built as a deliberate answer to London dry: its botanicals, among them cardamom, coriander, lavender, anise and sarsaparilla, are macerated together for hours before distillation, which pulls juniper back from the front of the glass and lets the rounder flavors share the space. The nose is floral and faintly sweet, the palate creamy with baking spice and dried orange over a restrained pine note, and the finish stays smooth. Mix it where juniper usually shouts: a martini, a Negroni, an aviation cocktail.
