Aviation Heritage Spirits C-17A 'Flying Knights' is a straight bourbon in a squadron-themed series, each release named for an aircraft and the unit that flew it. The straight designation means the whiskey spent at least two years in new charred oak and reached the bottle with nothing added but water, which is the plainest and most honest way an American whiskey can be sold. Expect honeyed corn, vanilla and toasted nuts on the nose, a palate of caramel, cinnamon and dry oak, and a medium finish that lands spiced and clean. The distillery is not named on the label.
