Three Sheets Barrel Aged Rum is Ballast Point's aged expression, bottled at 80 proof and rested in oak until the cane spirit picks up colour and weight. Barrel time does honest work here: the sharpness of young rum rounds off and the sweetness turns from raw sugar toward something closer to toffee. The nose is vanilla, banana and light oak, the palate brings caramel, baked pineapple and a touch of cinnamon, and the finish is warm and moderately dry rather than syrupy. It sits comfortably between a sipping rum and a mixing one. Try it neat, on a big cube, or stirred into a rum old fashioned.
