Barber Lee Piloncillo White Rum 750 ml

Barber Lee Piloncillo White Rum is made with piloncillo, the unrefined cane sugar sold in hard cones across Mexico, rather than the neutral molasses most white rum is built from. That choice shows up in the glass as more character than a standard silver rum carries: the nose has raw cane, grassy sweetness and a little brown butter, the palate is soft and slightly earthy with cane syrup and light pepper, and the finish is clean and dry. Unaged rum with something to say is rarer than it should be. Use it in a daiquiri where the rum has to hold its own, or a mojito built with plenty of mint.
