Barrelsmith Paloma is a bottled ready-to-drink version of the Mexican highball that locals order more often than the margarita: tequila, grapefruit and a salty-sour edge, mixed and sealed so the work is done before you get home. The nose is pink grapefruit and citrus zest, the palate is tart and lightly bitter with grapefruit, lime and agave sweetness underneath, and the finish is dry and clean rather than sugary. A good paloma should taste refreshing rather than candied, and that is the line this one aims at. Pour it over ice in a tall glass, salt the rim, and add a grapefruit wedge.
