Bayab is a South African gin built around baobab fruit, the chalky, citrus-tart pod from the tree that gives the brand its name, and this expression adds African palm and pineapple to the botanical bill. It sits firmly in the contemporary camp, where juniper is present but sharing the stage rather than running it. The nose is ripe pineapple and citrus over a resinous juniper base, the palate is soft and tropical with palm sweetness, tart baobab and a light peppery spice, and the finish is clean and fruity.
