Big Gin Peat Barreled takes the Seattle distillery's juniper-forward flagship and rests it in casks that previously held peated whisky, so the smoke comes from the wood rather than from anything in the botanical bill. It is a genuinely unusual gin. Woodsmoke arrives first on the nose, with juniper and citrus peel sitting just behind it. The palate keeps the original structure intact, pine and coriander and the brand's signature Tasmanian pepperberry, but wraps the lot in soft campfire smoke. The finish is long, smoky and dry. Sip it neat over one large cube the way you would a young island malt, or make a smoky negroni that needs no adjustment.
