Booker's is bourbon the way Booker Noe drank it at home: uncut, unfiltered and taken straight from the middle of the rickhouse at whatever strength the barrels give up. Each release is named for something out of the Noe family's life, and By the Pond is the second batch of 2025. Nothing is added and nothing is taken away, so the proof runs high and the texture is thick. The nose is vanilla, dark caramel, tobacco and charred oak. The palate is big brown sugar and toasted nut with dark fruit and pepper behind it, and the finish is very long, hot and oaky. Add a few drops of water and let it settle before the second sip.
