Bull Run's seven-year single malt is distilled in Portland from malted barley and finished in Madeira casks, a fortified-wine wood that brings nutty, oxidative sweetness rather than the heavy dried-fruit weight of sherry. Oregon's mild, damp climate matures whiskey slowly, so seven years here reads more like a gentle polish than a hard oak stamp. The nose is toasted hazelnut, honey and baked apple; the palate carries malt loaf, dried apricot, caramelised sugar and a faint walnut bitterness; the finish is warm, nutty and medium-long. Drink it neat in a tulip glass, or with a drop of water to lift the fruit — this one does not need ice.
