Long ageing turns tequila into something closer to aged whiskey or brandy — the agave is still there, but it sits beneath the vanilla and wood rather than leading. Expect cooked agave, caramel and toasted oak on the nose, a soft palate of butterscotch, dried fruit and baking spice, and a warm, sweet finish. Drink it neat in a copita, no lime and no salt.
