CaliFino's limited edition añejo is a 100% blue agave tequila from Jalisco carrying an eight year age statement and a sherry cask, both unusual in a category where three years already counts as long. Time in sherry wood pulls an agave spirit toward dried fruit and nuts while the cooked agave holds its ground underneath rather than vanishing. Expect raisin, cooked agave and toasted oak on the nose, a rounded palate of fig, caramel and warm baking spice, and a long, sweet, faintly nutty finish. This one belongs in a copita or a brandy glass, neat and at room temperature — do not bury it in a cocktail.
