Calle 23 is the 100% blue agave tequila founded by Sophie Decobecq, a French biochemist who came to Jalisco and built the brand around fermentation — she works with selected yeast strains rather than leaving that stage to chance, which is unusual attention for a category that usually markets its barrels instead. The result is a tequila that tastes of agave and of the process rather than of additives. Expect cooked agave, citrus peel and light vanilla on the nose, agave sweetness with white pepper and a touch of oak on the palate, and a clean, dry, peppery finish. Sip it neat in a copita, or make a sharp margarita.
