Casa Don Ramon Mezcal 40 Salmiana 750 ML

Casa Don Ramón's mezcal is made from agave salmiana, a broad-leafed highland agave that grows well north of the espadín fields most mezcal comes out of. Salmiana gives a different profile from the usual smoky Oaxacan template — greener, more vegetal and herbaceous, with the smoke sitting further back in the glass. Expect wet earth, green pepper and a light campfire note on the nose, a palate of cooked agave, citrus peel and mineral bitterness, and a dry, savoury finish. Sip it slowly at room temperature from a copita with orange slices on the side, or use it where a blanco tequila would taste too clean.
