Since Billy Walker took over the distillery in 2017, the 10-year has become its calling card: matured in Pedro Ximénez, Oloroso, red wine, and virgin oak casks, then released in batches that each land at a slightly different proof. Expect a sherry-driven pour — mocha, fig, toasted hazelnut, and honeycomb on the nose, then baking spice, brandied cherry, and toffee across the palate. GlenAllachie bottles it at natural colour and non-chill filtered, so the texture stays intact.
