Cazcanes makes additive-free tequila from Jalisco agave, and No. 7 is the expression the brand is best known for. A joven bottling keeps the spirit young and close to the plant, so what you get is the distillery's work rather than the barrel's. The nose is cooked agave, citrus peel and a green vegetal note; the palate is sweet roasted agave with white pepper, lime and a saline mineral edge; the finish is clean, dry and peppery, with none of the vanilla sweetness that additives often supply. Sip it neat in a copita, or build a margarita that does not need much help.
