Chandon California Brut is a traditional-method sparkling wine made in Napa Valley by the California arm of the Chandon family, built on the same Chardonnay and Pinot Noir that anchor Champagne. The second fermentation happens inside the bottle, which is where the fine, persistent bead and the faint bready note come from. Green apple and citrus lead the nose; the palate is crisp and dry with pear, lemon and a hint of almond; the finish is clean rather than sugary. This 187ml split holds a single generous glass, which makes it useful for a toast that does not need a whole bottle. Serve it cold, or build a French 75.
