Chateau Montelena Chardonnay is the wine that rearranged the wine world in an afternoon, taking first place at the 1976 Judgment of Paris tasting and proving Napa Valley could stand next to Burgundy. The house has not chased butter in the years since: malolactic fermentation is blocked, so the acidity stays taut and the fruit stays in focus. Green apple, lemon peel and white blossom lead the nose. The palate runs to pear and quince with a light toasted note sitting behind the fruit rather than over it, and the finish is long and mineral. Serve it cool but not ice cold, with roast chicken, crab or a hard cheese.
