Chateau Souverain is a California Cabernet Sauvignon with roots in Sonoma County, built as an everyday bottle rather than a cellar project, and it does that job honestly. Ripe North Coast fruit and a short stint in oak give it a shape most people recognise immediately. The nose is welcoming and straightforward, with black cherry, plum and a little vanilla. The palate follows through with blackberry, soft tannin and a hint of mocha and sweet spice, and the finish is medium and unfussy. There is nothing to decode here. Open it an hour before a weeknight dinner and pour it with burgers, pizza or anything cooked over charcoal.
