Coit Spirits Indiana Straight Bourbon is a four-grain, high-rye bourbon distilled in Indiana, a state that quietly supplies a good share of the bourbon on American shelves. A four-grain build adds a second small grain alongside the usual corn and rye, and dialling the rye up from there is what puts spice at the front of the glass rather than sweetness. Caramel and orange peel lead the nose with dry baking spice behind them. The palate turns to cinnamon and clove over brown sugar and toasted grain, and the finish stays dry and peppery. Drink it neat first, then over one large cube, or build a rye-leaning old fashioned.
