Corning & Company Pond Fork Bourbon is an American bourbon, which by law means a corn-led mash aged in new charred oak with nothing added but water. That legal floor does most of the flavour work in any bourbon: the corn brings sweetness, the fresh char brings caramel and vanilla, and time in the barrel supplies the rest. Expect vanilla, brown sugar and toasted oak on the nose, a palate of caramel corn, baked apple and cinnamon, and a finish of dry wood and warm spice. It is a straightforward pour, good neat in a rocks glass, over a single large cube, or built into an old fashioned.
